Kale and quinoa are just two of the basic ingredients needed that makes this salad savory and bright! It’s so easy and delicious that every single time I make it it’s a home run. While the ingredients may sound a little trendy, they are far from it as they are readily available and a staple in most kitchens now a days. Add your favorite protein for an extra layer of goodness and turn it into a full out dinner plate loaded with flavor!
Kale & Quinoa Caesar Salad
1 lb. bag of chopped Kale or a large bunch of fresh Kale leaves, chopped
8oz. package pre-cooked quinoa
½ of a medium onion, chopped
1½ cups sliced cherry tomatoes
juice of one lemon
1 tbsp minced garlic
2 tbsp worcetershire sauce
2 tbsp mayonnaise
2 tbsp dijon mustard
¼ cup shaved or grated parmesan cheese
kosher salt and pepper to taste
- Cook quinoa according to package instructions. Rinse and pat dry the chopped kale.
- In a large bowl mix kale, warm quinoa, onions and tomatoes, set aside. (The warm quinoa will help soften the kale a little.)
- In a separate bowl mix all other ingredients together and pour over the salad. Mix to coat well and serve.
