Summer Peach Cobbler

Whether a cobbler, a crumble or crisp, no matter what you call it, this recipe is not only easy but sooo delicious! Summer fruits and berries are perfect for this type of dessert and today I’m sharing my version of a fantastic Summer Peach Cobbler with some of those delicious picks we grabbed the other day…

Cobblers get their name because the dollops of batter or biscuit dough which are dropped on top of a bed of fruit puffs up and looks like cobblestone when baked. It was very popular during the 1850s when most streets were paved with cobblestone. Crumbles are baked fresh fruit with a streusel crumb topping. This is usually made with a combination of butter, flour and sugar, with the option to include nuts. You spread it on top of the dish and bake to create dense cakey crumbles. Crisps are similar to a crumble with the exception that the topping is less dense and usually includes oats. The oats will crisp up during baking giving the dessert a layer of crispy crunch.

Made with fresh peaches, sugar, and a fabulous topping this dessert is the queen of summer goodness!

  • 6-8 large ripe Peaches, rinsed and sliced
  • ¼ cup sugar

  • ½ cup melted butter
  • ¾ cup sugar
  • 1 tspn baking powder
  • pinch of salt
  • whipped cream or vanilla ice cream
  1. Preheat oven to 350 degrees. Spray the bottom of a 9×13 baking pan/dish with Pam Baking spray.

  2. In a medium bowl gently mix sliced peaches with sugar, then transfer to prepared baking dish.

  3. In a separate bowl, using a handheld mixer, mix butter, sugar, vanilla, flour, baking powder and salt until a cookie-dough batter forms. Place scoops of the mixture over the top of the peaches. Spread with a spoon or with your fingers.

  4. Bake for 25-30 minutes or until juices bubble around the sides. Let stand for 20-30 minutes before serving. Top individual servings with whipped cream or vanilla ice cream.

Peaches are the star of summer fruits, I think. They’re pretty, juicy, they smell sooo good and are incredibly delicious. I’m pairing this dish with soup spoons because why miss out on the gooey goodness from the fruit and melted ice cream?! This recipe is so easy to make and the end result will certainly amaze you. And did I mention how pretty peaches are?
