Oatmeal is one of my favorite breakfast foods. Because I make it all year long I usually add whatever fruits and berries are in season. Not only is it a great energy booster but it’s also a healthy way to start your day. This is one of several oatmeal bowls I like to make. Come the fall, I like to add cinnamon, brown sugar and dates. I also prefer old fashioned rolled oats versus instant oats. They take a little longer to cook but it’s so worth the wait.

Since our brunch options have been slashed by way of the pandemic this seems to foot the bill whenever I feel like having something warm and hearty. Fresh fruits are best but frozen fruit is great because it won’t go bad and you’ll always have it handy in the freezer.

Blueberry Banana Oatmeal Bowl
Ingredients (this makes one serving but can be multiplied)
- 1 cup old fashioned oats
- 1/2 cup milk of choice
- 1/2 cup water
- dash of salt
- 1/2 teaspoon vanilla extract
- 1 medium banana, sliced
- 1/2 cup blueberries
- 1/4 cup roasted walnuts
- drizzle of honey
Directions:
- Add oats, milk, water and salt to a saucepan. Mix and bring to a gentle simmer over medium heat. Cook until oats are done and creamy. Stir in vanilla extract.
- Remove from heat and pour in a bowl. Add sliced bananas, blueberries and roasted walnuts. Drizzle with honey.
