Hello Friday! And a three day weekend, the official “unofficial” beginning of summer! And boy do I have a treat for you. An incredibly simple drink that will take you to a tropical delight moment!

Summertime is the perfect time to sip on anything tropical and this cocktail is one of my summer favorites as it reminds me of my carribbean island of Puerto Rico. Although I prefer the frozen version this one is just that much easier to make. Coconut and pineapple are the ultimate flavors of any tropical drink and the simplicity of the ingredients are easy to find. Even if you’re sitting in your back yard you’ll feel like you’re in an island retreat!
