Cranberry Quinoa Salad with Walnuts This is a great winter-ish type of dish. Although you can easily find the cranberries and walnuts any time of year the dish is hearty and very much like a winter comfort food. I skipped making candied walnuts. Fun facts: Quinoa has been consumed for thousands of years in South America, although it only became trendy and reached “superfood status” a few years ago. These days, you can find quinoa all over the world especially in health food stores and restaurants that emphasize natural foods. There are three main types: white, red and black. The three Quinoas.image via Authority Nutrition

Quinoa is naturally gluten-free and contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E, and fiber. It is one of only a few plant foods that are considered a complete protein, containing all nine essential amino acids.
