This time of year I pretty much add nuts and cranberries to almost any dish I make. I combined simple orzo pasta with some of my favorite ingredients helping to create an incredibly flavorful and easy dish you can add to your holiday table.
[yumprint-recipe id=’65’]I usually make orzo pasta as a salad during the summer but this time I wanted to bring it to the winter dinner table. I accomplished that by adding simple winter veggies, fruits and nuts. If you’re not a fan of brussels sprouts don’t fret because by shredding it and cooking it with garlic it really reduces it’s cabbagey flavor. Of course you can always opt for spinach, I just prefer crunchy over soggy. The walnuts heightens the nutty flavor in the parmesan cheese and the slightly sweet and tart cranberry adds a touch of punch. This dish is great by itself and perfect as a side dish. Enjoy!
