I honestly don’t know why I hadn’t made this sooner! Every time I came across these things at the grocery store I always wondered what the heck they were and what exactly did people use them for. Now I know and I’m super excited to share this recipe with you. Take advantage of squash season and do yourselves a favor and make this. Like me, you’ll be glad that you did! This recipe is a two-part recipe of sorts. But don’t let that intimidate you. It’s actually quite easy to put together. When I was searching for recipes on how to make acorn squash this is by far the most popular way to eat them. If you like butternut squash, like I do, you’ll be in for a treat with these.
I decided to use my all time favorite Thanksgiving dressing to stuff the acorns with. You can easily adjust the ingredients to your liking but my stuffing (minus the chestnuts) is very simple to make and packed with flavor. You end up with a fantastic savory dish that makes for a great starter. I promise you’ll love it!
